A new local concept is coming to the popular Heritage Marketplace with a unique culinary approach.
Grubstak will open this fall at Gilbert Road and Vaughn Avenue in a 2,968-square-foot space, not including the patio.
Diners start with a base of either regular or sweet potato waffle fries, roasted root vegetables, or romaine spears as a salad foundation, and continue from there with choice of meats, toppings, and sauces. Staks, as the restaurant calls them, can range from a healthy lunch to something more guilt-inducing, and will be available alongside wine or local craft beer.
The restaurant is owned by Colton Grubb. Longtime Valley residents may recognize the Grubb name, as the Grubstak owner is the grandson of Lou Grubb of Lou Grubb Chevrolet.
The restaurant is currently under construction with LGE Design Build and is designed “with large tables and open seating to encourage a social dining experience,” according to a press release. The restaurant will feature a covered patio, indoor and outdoor community tables, and two walls of floor-to-ceiling windows for plenty of natural light.
