The Herb Box restaurant owners split, new Phoenix branch remains on track

The Herb Box customers won’t notice a difference, but co-owner and executive chef Becky Windels has left the company. Co-owner Susan Wilcox will continue to run the business, which the two founded as a tiny shop in 1995 on Shea Boulevard near Scottsdale Road in north Scottsdale.

It has been a successful journey for the forerunners of the now ubiquitous farm-to-table cooking philosophy. By 2011, the duo had expanded to a much-larger, full restaurant in downtown Scottsdale, and relocated their original location to DC Ranch at Market Street.

Plans for the Herb Box’s first Phoenix location remain on track at the Colony restaurant center, which is under construction on Seventh Street north of Missouri Avenue. She hopes to open the new branch in early 2016 and is looking at additional projects in and outside of Arizona.

For Windels, her departure is an opportunity to enjoy a retreat from the rigors of running a busy restaurant and catering company. She said she plans to travel, spend more time with her husband and to explore other culinary opportunities.
